Paul’s Famous GuacamoleAvocados
1 ripe avocado
1 ripe tomato
1/4 small Maui sweet onion
1/2 cup (4 fl oz) fresh lime juice
Himalayan pink salt
Halve, pit, and peel the avocado, then place in a bowl and mash with a fork. Halve the tomato crosswise, then grate the flesh on the large holes of a handheld grater, discarding the skin that is left behind. Grate the onion in the same way. Add the tomato and onion to the avocado, then mix in the lime juice and the salt to taste.
Makes about 1 1/2 cups (12 oz)
My Comments: I always do the onions and tomato first and add 1 glove of garlic chopped or pressed a hand full of tomatillo 1/2 t of cayenne, 1/2 cup of cilantro. Also you might need another avocado if its small. by ErnieBieraADV
